BEFORE USE
- Remove the protective film from all surfaces, to facilitate removal use hot air
(e.g. hair dryer), do not use sharp tools.
POSITIONING THE OVEN
- Install the oven on floors with adequate load-bearing capacity.

- Safety must be the first priority. When the oven is in operation ensure that no other fuel and materials that may
be damaged by heat and sparks are close to it.
- The outer walls of Duettino may reach high temperatures greater than 50°C.
- Position the oven so it is not in contact with the wall or other furniture and make sure there is a gap of at least
5 cm alongside and behind the oven if you are using fireproof materials, at least 20 cm if you do not use fire-
resistant materials.
- The upper part of the furnace can not be recessed and must remain free from furniture that compromise
the correct ventilation.
- The oven must be connected to a smoke exhaust system, the smoke discharge must be airtight.
- The oven can be lifted by 4 people using the steel bars.
- The accessory works must not rest on the structure of the oven.
- Do not move the oven while it is in use.
ABOUT THE CHIMNEY
- The exit of smoke from the wood-fired oven has a
diameter of 150 mm.
- By law, the chimney flue must serve only one thermal
device and connecting more than one device to it may
compromise the regular dispersal of smoke.
- A well-constructed chimney flue should not contain too
many joints or curves. Hairpin turns at angles greater than
45° are to be absolutely avoided for the correct dispersal
of smoke.
HOW THE OVEN IS MADE
- The refractory stones inside the oven can be easily taken out to make
the Duettino lighter and therefore easier to move. After placing the
oven in position, place the refractory stones back inside the cooking
chamber, lower, Oven Flame and upper, Oven Brick.
- The Oven Flame contains 12 stones distributed into 2 layers, each 3
cm thick.
- The Oven Brick contains 15 stones distributed into 3 layers, each 3
cm thick.
- The Oven Brick is also equipped with a useful second Sliding Deck
in stainless steel: insert the deck by sliding it in between the lateral
guides. The sliding deck, when pulled out half way, makes it easier to
insert dishes for cooking.
- Follow the numbering in sequence when inserting the refractory
stones: repeat the step for each layer of the refractory deck
- Although the refractory stones are very resistant to high temperatures,
they are fragile and easily broken if struck or dropped: handle the
stones with great care.
The cooking decks have been designed to ensure easy assembly: the small space around the perimeter of the
refractory deck is necessary for the insertion of the stones.
