• 20g pine nuts
• 3 large basil leaves
• 20g parmesan cheese
• ½ clove garlic
• 50-60ml olive oil
• Sea salt and freshly ground
• black pepper
Preparation
1. Add the pine nuts, garlic and parmesan cheese into the tall cup and attach the cross blade, pulse to chop
to a medium course crumb. Remove the nut mixture and place into a bowl. Add the rocket, basil and olive
oil to the cup and blend until smooth.
2. Add the rocket mixture to the nut mixture and stir well.
3. Add to freshly cooked pasta and sprinkle with extra parmesan cheese.
Serves 2-3
Banana, Mango and Strawberry Smoothie
Smoothies are a great way to get extra fruit in your diet and head towards your 5 a day. They will energise you
in the morning or pick you up in the afternoon, using your blender they are quick and easy.
Ingredients:
• 3 ripe bananas
• 1 mango sliced
• Handful of strawberries, roughly chopped
• 300ml chilled natural yogurt
• 200ml chilled milk
• 2 tbsp runny honey
• Good squeeze of lime
Preparation:
1. Put the bananas in the freezer and leave for an hour or two, the skins may go black, but this is fine.
2. Peel the bananas and add to the blending jug with the mango, strawberries, yogurt, milk, honey and a
squeeze of lime and blend until smooth.
3. Pour into chilled glasses and serve.
Serves 4
Tropical Fizz
This is great for a summer' s afternoon, lovely and cooling with a little kick from the ginger. You can make it
more special by adding a bottle of sparkling wine instead of the sparking water.
Ingredients:
• 1 Pineapple, skin and hard core removed, chopped
• ½ lemon, pith removed roughly chopped
