How to close the lid and start cooking

When you want to start cooking place lid on pressure cooker aligning with the small
the lid metal surface with the
perfectly aligned gently push the lid downwards. Next slide the lid handle clockwise until the lid
and base handles join when you'll hear a 'click'. The opening button automatically recedes. The
cooker is correctly closed. Unless you close the lid correctly, the opening button won't move.
Even if you put the cooker on the hob, the steam will start being released. The closure will lock
automatically once the pressure indicator has risen, and will only unlock when the pressure indi-
cator has returned to its original position.

Once the pressure cooker is closed choose one of the pressure levels on the operating val-
ve. Level 2 is known as High Pressure or Very Fast. Use this level for most recipes: stews,
soups, meats, grain, etc. Level 1 which Low Pressure or Fast. Use this level for delicate foods like
fish or vegetables.

Place cooker on the hob centre or cooking area. The pressure cooker can be used on all
kinds of stoves, i.e. gas, electric, ceramic or induction. When using a gas stove adjust
the burner so the flame is totally under the cooker bottom, this way it won't decolour the
sides of the cooker. When using an electric stove choose a cooking area with the same dia-
meter as the pressure base or in its defect with a smaller diameter.

Start cooking on a strongheat (SEE BELOW FOR ELECTRIC STOVE INSTRUCTIONS).
When the pressure indicator rises and steam starts coming out of the valve, reduce
heat intensity, maintaining a constant light steam jet. At this point COOKING TIME STARTS
and it's when you have to control the time your recipe needs. We recommend using a stove
timer to control the exact cooking time.
NOTE: BY DEFAULT, THE PRESSURE VALVE COMES FROM THE FACTORY IN POSITION 2;
BEAR IT IN MIND THE FIRST TIME YOU USE IT.
