Safety notes
Read the safety notes and the operating manual of the
used electrodes carefully in order to ensure a faultless use.
Risk of injury!
When removing the protective cap ensure that
there is no hand contact with the blade of the
puncture aid.
Ensure during the assembly/disassembly of the
puncture aid that there are no injuries through the
blade of the puncture aid.
Possibly wear cut protection gloves!
Always put on the protective cap when not using
the puncture blade!
After use of the puncture aid, always clean it thoroughly
(see  section "Cleaning")
Use as intended
The puncture knife together with the pH electrodes of the
structural shape BlueLine 21pH serves for the direct pH
puncture measurement in food (e.g. meat or cheese).

Blade: Knife steel DIN 1.4112 and 57-59 HRC
Handle piece, protective cap, spherical cap, handle

Polybutylene terephthalate (PBT, white, food-compliant,
FDA-compliant)
All materials are suitable for cleaning in the dishwasher
up to a temperature of 60 °C.

Commissioning
Measurement of the pH value
For measuring the pH value and for calibration
please observe the respective operating manual of
the used pH electrode and of the pH meter.
Storage of the installed pH electrode in the puncture
aid
The storage of the installed pH electrode should only take
place for short intervals in the protective cap of the
puncture knife. When storing it for several hours or longer,
please dismantle the electrode from the puncture aid, clean
it an insert it into the watering cap (filled with 3mol/l KCL).
Cleaning
21 pHT
The individual parts of the puncture aid can be cleaned with
a customary dish washing detergent and a brush,
afterwards with ethanol. Cleaning in a dishwasher is also
possible.

Remove the watering cap from the electrode
Possibly connect the cables to the electrode.
Push the electrode through the handle piece.
Introduce the electrode into the puncture knife.
Observe the position of the diaphragm
opening. Orientation of the diaphragm parallel
to the blade!
Screw the handle piece onto the puncture blade:
Screw the cable through the slot of the of the
appropriate handle screw (see  section "Handle
screw versions") and screw it into the handle
piece.
Guide the cable laterally out through the slot and
screw the spherical cap on tightly.
Connect the cable to the pH meter.
Remove the protective cap prior to the pH
measurement.
Plunge the puncture blade 35-50mm deep into the
measurement good and read the pH value as
soon as it is stable.
