HOW TO PREPARE THE MACHINE FOR USE
To remove the motor from the machine body, rotate
it upwards by about 30° and pull it outwards (Fig. 1).
To install the motor on the smooth rollers, move
it close to the machine tilted upwards by 30°, then
insert the pin into the hole in the rollers (Fig. 2).
Push the motor until it leans against the side.
Rotate the motor downward by 30° to hook
it into the holes drilled in the side panel.
Before connecting the power supply, please make
sure that the mains voltage is the same as the
one indicated on the rating plate of the motor.
For safety reasons, it is recommended to always
secure the machine to the table using the special

BASIC RECIPE FOR THE DOUGH
Serves 6 people
• 500 g of soft-wheat flour
• 5 whole eggs
To achieve better pasta, use 250 g of soft-wheat
flour and 250 g of durum-wheat flour (semolina/
durum wheat semolina). 100 g of flour will be need-
ed while processing the pasta with the machine.
HOW TO PREPARE THE DOUGH
Pour the flour into a bowl, break the eggs in the
middle of the flour.
Beat with a fork, mixing the eggs thoroughly with
the flour (Fig. 4). Knead the dough with your hands
(Fig. 5), until it is completely smooth and elastic.
If the dough is too dry, add some water, if it is too
sticky add some flour. Remove the dough from the
bowl and place it on a pastry board slightly dusted
with flour (Fig. 6). If necessary, continue kneading
the dough with your hands, breaking it up into
little pieces (Fig. 7). Perfect dough should not stick
to your fingers. A word of advice: do not use cold
eggs straight out of the refrigerator.
HOW TO MAKE PASTA WITH ATLASMOTOR
Set the machine selector to 0, pulling it outwards
and rotating it, so that the two smooth rollers are
completely open (Fig. 8). Attach the motor to the
smooth rollers and start it by pressing the switch
in position I (continuous). Feed a lump of dough
through the smooth rollers. (Fig. 9). Repeat this
operation 5-6 times, folding the pasta sheet and,
if necessary, pouring more flour into the middle.
When the pasta sheet has a regular shape, feed it
through each thickness setting, until reaching the
desired thickness. To see the recommended thick-
ness go to page 27.
