The scale on the adjusting screw
of the adjusting screw must be changed according to the dough con-
dition. Too little moulding space may damage the surface of the dough
and too much space may get the result that the dough pieces are not
properly rounded.
Before the dough is put onto the machine, make sure that the dough
has rest for a short time after mixing to get the best result of
rounding.
5. Cleaning and operating
After use, the machine always has to be cleaned thoroughly. The
head must be opened and the knife has to be cleaned from residue
of dough. Do not use vegetable oil to lubricate the knife. The residue
of dough will become hard and may damage the knife or corrode the
machine gradually.
The rounding space must be adjusted according
to the weight of dough piece to get the best result
of rounding. This can be done by the position of
the adjusting screw
