To obtain deliciously crisp fries, proceed as follows. Once you have cut up the potatoes, plunge the uncooked fries into
hot water to remove any excess surface starch. Then rinse them thoroughly in cold water and dry them off carefully before
lowering them into the hot oil. This will prevent them from sticking to each other during the frying time.
