LEMON SORBET

1 egg white
2 dl lemon juice
200g sugar
3 dl water
Peel 2 lemons, without the white under the skin. Let the skin soak in the 3 dl water for
about 30 min. Strain the water and the lemon juice. Mix this fluid together with the
sugar and the egg white. Add this mixture in the ice cream maker.
Time: +/- 20 min
