ATTENTION: If the pressure measurement is not within the thresholds stated in table 4, instead of installing the
appliance you should contact your gas provider to report a fault with your mains supply.
Close the gas valve, disconnect the pressure measurement device, do up the screw you had previously undone and
close the front panel.

4.2 Regulating the primary air (Fig. 3)
The primary air is regulated correctly if the stability of the flames is ensured,
i.e. if flame lifts do not appear with the burner cold and if there is no flame
return with the burner hot.
The distance foreseen for regulation of the primary air is shown in Figures 3
and indicated in table 2. Unscrew the injector "E" with a 12 mm spanner and
mount the appropriate injector. Check the exact distance "X" for the primary
air.
4.3 Regulating the pilot flame
Regulate and check whether the flame envelops the thermocouple and that its appearance is correct. If this is not the
case, check that the injectors mounted are the right ones (table 2).
4.4 Checking the main burner
Switch on the appliance and check that the flame, lighting and regulation of the minimum are correct. If this is not the
case check the injectors and the position of the primary air.
5. REGULATION FOR OPERATION WITH OTHER TYPES OF GAS
In order to perform this operation the injectors have to be changed and the reduced
capacities and position of the primary air regulated as indicated below.
5.1 Replacing the injector of the main burner
In order to change the injector "C" (Fig. 3) remove, by pulling it, the control panel.
Using a spanner unscrew the injector and replace it according to table 2.
5.2 Replacing the injector of the pilot flame (Fig. 4)
The pilot flame is only accessible after having removed the control panel. It
has a fixed injector and no regulation of the primary air is required. In order
to change the injector "D" unscrew the attachment nut "E" and replace the
injector, according to table 2 or 3.
5.3 Regulating the reduced capacity (Fig. 5)
Unscrew the screw "F" of the minimum and turn it until the reduced capacity
indicated in table 2 is obtained. Check that the quantity of gas is sufficient
for maintaining a stable and even minimum and for resisting the change
from maximum to minimum capacity.
To adjust correctly, follow this procedure.

For liquid petroleum gas (LPG) (G30-G31) turn the screw to minimum.
For gas G20: adjust the bypass screw until the correct minimum has

been obtained and check that the minimum flame is stable over all the
burner surface and check that the flame does not go out or back fire
when it is lowered from maximum to minimum.
Caution: before using the appliance the plate has to be cleaned with hot water and detergent.
The appliance has to be used by qualified staff, since it is an appliance intended solely for professional kitchens. It also
has to be used under supervision and only for grilling food.
6.1 Open water suppy (Fig. 6 – 7)
Before turning on the machine, turn on the tap water supply from the grid (minimum pressure 0.4 bar).
