SMOKED MACKEREL PANINI (SERVES 1)

2 cooked smoked mackerel fillets
•
4 cherry tomatoes, halved
•
1 handfull watercress
•
3 slices wholewheat bread
dressing:
•
30ml crème fraiche
•
2.5g lemon zest, grated
•
2.5ml lemon juice
•
5g black pepper
Mix the dressing in a bowl. Refrigerate for 2 hours. Flake the mackerel on a slice of bread, top with
tomatoes and watercress, then add the other slice. Grill for 2-3 minutes. Sprinkle the dressing over the food.
