4 Cleaning, hygiene___________________________________
Disconnect the machine before
performing any maintenance or cleaning
Machine cleaning operations are a
significant source of flour dust emission
4.1 DAILY CLEANING:
• On acquisition of the divider, and every day
thereafter, clean the bowl, lid, plate and blades with
an oiled cloth (vegetable oil). To this end, remove the
cutters as described below:

Position the blocks supplied with the machine
as shown in the diagram:
Never wash the machine with a pressurized water jet
4.2 WEEKLY CLEANING:
• Every week, carry out the following operations:

Open the lid
-
Move the control handle to the left to position
the plate at mid-height
-
Unplug the machine
-
Remove the side panels using a screwdriver
-
Vacuum up any flour deposits and clean the
frame, the various plates, the liner sheets
•
Avoid using blow nozzles with pressurized air
which cause significant flour dispersal
•
Use industrial vacuum cleaners equipped with
a dust filter, as these mobile devices avoid this
significant source of flour dispersal
Do not place the blocks on the cutters
-
Close the lid
-
Move the control handle to the left to perform a
pressing/cutting cycle
-
Remove pressure from the blocks with a sharp
movement of the handle to the right.

Open the lid
-
Remove the blocks
-
Clean the lid and cutters using a plastic dough
cutter
-
Vacuum up any flour or dough deposits
-
Close the lid and perform a complete cycle to
realign the head and cutters in their lower
position
-
Open the lid and clean the inside of the bowl
and plate
-
Clean the closing mechanism
-
Never scrape off dough residues with a knife,
sandpaper or any metallic object. Always use a
plastic dough cutter. When you have finished
using it, rub over with an oiled cloth (vegetable
oil).

Reassemble the side panels
-
Plug the machine in again
-
Return the plate to the low position using the
control handle
• NOTE:
-
Make sure the cleaning products used are
compatible with the machine component
materials
-
Do not use abrasive detergents which could
scratch the surfaces
-
In order to limit dust emissions, it is
recommended to vacuum all flour deposits
