Instruction manual for D20 hydraulic divider

2.3 ELECTRICAL CONNECTIONS:

Check the compatibility between the machine's rated
electrical voltage and those of the power supply.
Plug in the machine using a standard current,
earthed, 16A 3-Phase socket and a suitable plug, to
be fitted to the power cable in accordance with the
IEC 309-1 standard.
Motor characteristics:
Nominal voltage = 230-400 V / (208)
o
Nominal power = 1.5 Kw
o
Frequency = 50 Hz / (60)
o
Nominal intensity = 6.6-3.9 A / (5.9)
o
Rotation speed = 3000 rpm / (3400)
o

3 Operating, Safety___________________________________

3.1 SAFETY AND OPERATION:

The safety of the user is ensured via:
- A disconnecting switch located on the front side
of the machine
- Protection of pump motor via a magneto-thermal
circuit breaker located in the electrical cabinet
- Compliance with the instructions in this manual
for the operation, cleaning and maintenance of
the machine.
Safety and hygiene:
- For flouring stages, use so-called "low dust
emission" flour.
- Distribute the flour manually or by means of a
sieve without a throwing action.
Flour dust is the principal cause of
respiratory allergies: rhinitis, asthma
Operation in standard cutting mode:
- Connect the machine to the power supply (see
§2.3)
- Switch
the
machine
disconnecting switch to position I (ON)
- For correct division, use trays that are suitable for
the machine's bowl dimensions:
- D20 = Ø420 trays
3.2 CAPACITIES:
• Operation in standard cutting mode: from 2 to 14kg of dough (20 divisions of 100 to 700g)
on
by
turning
(for a tray resting time of < 30 min)
Before switching on, make sure that:
-
there are no unwanted objects on any of the
machine's moving parts, especially inside the
bowl
-
all the protective devices have been installed
(liner sheets)
Once the machine has been plugged in, you
should perform a lid opening test by moving the
control handle. The head/cutters unit should rise
(or descend). If this does not happen, unplug the
machine and switch the two phase wires on the
plug.
Mandatory earthing via the green/yellow wire
- To avoid sticking, make sure the bottom of the bowl
is well floured
- Empty the dough into the centre of the bowl. Spread
it out manually but without excessive stretching.
Avoid applying force to the dough - a cause of poor
division
- Flour the dough placed in the bowl to prevent it
sticking to the lid
- Close the lid and lock it using the handle
- By turning the control handle to the left, press and
then cut the dough
- Once cutting is complete, remove pressure from the
dough by sharply moving the handle to the right
- Unlock and open the lid using the handle
- Move the control handle to the left to offer up the
dough portions
- Remove the portions
- Move the handle to the right to lower the
head/cutter unit
