One of the fantastic possibilities of the YAKINIKU® is to maintain the temperature.
With the help of the two air sliders you can set the temperature of your kamado and
it is possible to reach temperatures of more than 400ºC. With these temperatures you
can prepare your dishes in all possible ways, from smoking at low temperature to
grilling in high heat. The outer thermometer indicates the correct temperature. Unlike
other charcoal appliances, the amount of charcoal used is separate from the cooking
time. You simply start with the same amount of charcoal for each meal. Afterwards,
close the slide to extinguish the fire and keep the unused charcoal for another time.
What is the rotating lid and metal slider?
Your YAKINIKU® features a metal sliding lid with rotating lid. This allows the tempera-
ture to be perfectly controlled and does not need to be removed to open the lid of the
YAKINIKU®. The stainless steel slider is equipped with holes so that the temperature
can be set very accurately, especially for smoking dishes. The stainless steel sliding
lid has a larger ventilation hole so that high temperatures are reached faster. The hat
on top of the sliding lid ensures that no rain can enter through the ventilation holes.
How do I extinguish the YAKINIKU®?
Simply, by closing both ventilation holes after cooking. The fire will quickly extin-
guish, after which the YAKINIKU® cools down. Due to the thick ceramic walls of the
YAKINIKU® it takes a hour and sometimes longer to cool down. (Remember that it
is precisely then that dishes can be kept warm!) Don't use water to put out the coals.
Should special charcoal be used for the YAKINIKU®?
Don't use briquettes. We recommend the use of the 100% natural charcoal from YA-
KINIKU®.
Depending on your style of cooking and the number of times you use the YAKINI-
KU®, a bag of 10 kilos 100% natural charcoal is sufficient for many cozy YAKINIKU®
evenings. Suitable types of charcoal are available through the website https://www.

Can I cook with the lid open?
No. The secret of the YAKINIKU® is to hold, circulate and control the heat. The lid
must be closed so that the heat radiates from both above and from the coals. With the
lid open, the YAKINIKU® is nothing but a regular, inefficient barbecue grill, causing
the dishes to dry out.
