Mayonnaise
Note: Mayonnaise can be prepared
in the blender with whole eggs (egg white
and egg yolk) only.
Basic recipe:
2 eggs
2 tsp. mustard
¼ l oil
2 tbs. lemon juice or vinegar
1 pinch of salt
1 pinch of sugar
Ingredients must be at the same
temperature.
Process the ingredients (except the oil)

in the blender for several seconds
at setting 2.
Switch the blender to setting 4 and slowly

pour the oil through the funnel and mix
until the mayonnaise emulsifies.
Maximum quantity: Double the quantity
of the basic recipe.
