Preparation, drying times and preservation
General information
- Wash the products before putting them on the trays. Do not put wet products in the dehydrator. WARNING: do
not use the trays if they are wet.
- Remove any inedible parts from the products.
- Cut the products so that they can be freely placed on the trays (not too close together or overlapping).
- WARNING: if the vegetables are cooked beforehand, allow them to cool before placing them on the trays.
- WARNING: THE DRYING TIMES OUTLINED IN THIS MANUAL ARE GIVEN AS INDICATIONS ONLY. The
actual drying time depends on the room temperature and humidity, on the level of humidity of the products, on
the thickness of the pieces, etc.
- The containers for preserving the products must be clean and dry.
- WARNING: do not insert products that are still hot in the storage containers.
Fruit
Wash the fruit. Remove the inedible parts and any skin.
Fruit can be dried in its natural state or by adding lemon or pineapple juice.
Cinnamon can be added to improve the flavour of the fruit.
We recommend using glass containers with metal lids to improve preservation of the fruit and storing them in a
dark, dry and cool place (5-20°C).
During the first week after drying, check that there is no humidity in the container. If there is any humidity, it
means that the products have not been dried properly and that they should be dried again.
Vegetables
Wash the vegetables. Remove the inedible parts.
Before drying, you should blanch the vegetables for a few minutes (especially, beans, cauliflower, broccoli,
asparagus and potatoes), then plunge them into cold water and dry them.
Medicinal plants
After drying, you should place the medicinal plants in paper bags or glass containers with a metal lid and store
them in a cool, dark place (5-20°C).
Meat
Before drying, cut into small strips.
Poultry
Before drying, either boil or fry the meat.
Fish
Before drying, you should either boil or cook the fish (for about 20 minutes at 200 °C).
