Tips for grilling food well

A basic recipe for raclette consists of the following: place vegetables and meat on some thin slices
of boiled potatoes in their skins and gratinate them with a slice of suitable cheese. However, there
are no limits to your imagination when filling the raclette pans (8).
 Prepare the ingredients if possible before your meal, but not too soon so that they remain fresh.
 Use ingredients that require a short cooking time.
 Vegetables can also be pre-cooked, for example, by frying on the stone plate (2).
 Season the ingredients to taste.
 Ensure that finely chopped ingredients are about the same size. They will then be cooked at
about the same time.
 If necessary, cover the prepared ingredients with cling film and put them in the refrigerator until
you want to use them.
 The most important ingredient for raclette is cheese. Melted cheese is (almost always) used for
gratinating food in the raclette pans (8). Raclette cheese should melt well and have the right
flavour. This may be a milder type at times and a stronger type at other times depending on
taste.
Here are some suitable cheeses:
raclette cheese, Gouda, Cheddar, mountain cheese, Appenzeller or Emmental.
 Do not place the prepared ingredients too close to the raclette grill as this emits a lot of heat
and the ingredients should remain as fresh as possible.
 Tender meat is the most suitable for grilling and frying as this is also more tender after grilling.
 Avoid turning the food frequently to prevent it from drying out.
 To avoid an excessively long cooking time, your food should be not too thick.
 When frying meat on the stone plate (2), a little salt can prevent the meat from sticking to the
stone plate (2). You must still season your meat.
 Thinly sliced vegetables can be pre-cooked well on the grill plate (1) and stone plate (2). They
can then be left to finish cooking in the raclette pans (8).
 If you grill or fry sausages, pierce them in advance so that they cannot burst and splash grease.
