Crêpes feast
French Crêpes
We recommend this French batter recipe but you can, of course, use your own.

150 g flour
3 eggs
1 cup milk

3 desert spoons butter (melted and cooled)

Preparation
Stir the eggs well into the flour and then add the milk, water and salt. Mix in the 3 desert spoons of butter.
The batter should have the consistency of cream; if too thick add water teaspoonful at a time. Leave to
stand for an hour. The above quantities are for 12 crêpes (2 – 3 persons).
Pancakes for slimmers
Crêpes are excellent for those with an eye on their weight. e. g filled with chopped, steamed mush-
rooms, leaf spinach, asparagus, prawns, ricotta cheese, tomato ragout or simply sprinkled with cheese.
Pancakes for gourmets
For those who pay less attention to calories fillings can be different e. g. well seasoned minced or chopped
meat, roast bacon strips or grilled liver, perhaps with the addition of a suitable sauce.
For sweet fillings
For sweet fillings we can use almost any jam, chopped fruit with or without sugar or ice cream. For adults
this can be «Crowned» by adding a few drops of liqueur.

Mini-Pizza-Dreams
Dough ingredients
250 g flour

15 g fresh yeast

1 tbsp olive oil
Dough preparation
Place the flour in a mixing bowl and make a well in the centre. Crumble in the yeast and stir
together with some lukewarm milk and the sugar. Allow to stand for about half an hour. Then add
the remainder of the milk, the salt and the oil and beat until the dough breaks away from the bowl
at the edges. Cover with a cloth and leave to stand for approximately an hour in a warm location.
Then roll out the dough on a floured table to about 2 – 3 mm thick and cut out to the required size.
lightly flour the pieces and lay on baking paper, or interleaved with baking paper to avoid sticking.
Tip
The dough can, when separated by baking paper, be deep-frozen without problem for a period of up
to three weeks. Thaw for about one hour prior to use.
Tomato sauce ingredients
