4. 2 For the goods
Provisions
• introduce the goods already cooled at the
temperature that complies with the cooling
chain
• check at least twice a day, weekend included,
that the temperature of the cabinet and the
goods is maintained
• load the counter so that the goods from a
longer ti me is sold before the newly received
goods (stock rotati on)
• load the counter in order observing capacity
limitati ons
• use containers suitable for preserving the
goods
• regularly check the operati on of automati c de-
froster (frequency, durati on, air temperature,
restorati on of normal operati on etc.).
4. 3 For the environment
Provisions
• the room temperature and humidity levels
must not exceed those specifi ed in chapter 8.
• maintain the maximum effi ciency of the air-
conditi oning, heati ng and venti lati on systems
of the point of sale
• the speed of air inside the room in the vicinity
of cabinet openings should NOT exceed 0.2 m/s
• protect the goods against sunlight.
4. 4 For use
Provisions
• work with cauti on and diligence.
• always use the PPE (personal protecti ve
equipment) provided for, chapter 3.
• perform maintenance on a regular basis.
• all interventi ons needed on the counter should
be performed by a specialized technician.
• check the drainage of defrost water (unclog
the drains, clean the fi lters, check the siphons,
etc.).
• dispose of the defrost water, or that used for
washing, in the sewer system or water treat-
ment plant compliant with legislati on in force,
the water can come into contact with pollut-
ants due to:
- nature of product,
- any residue,
- accidental breakage of packaging containing
liquids
- use of improper detergents.
