Ice cream wafer
For 50 ice cream wafer – In a bowl stir 2 eggs with 30 cl of sunflower oil or 250 g of melted butter.
Add 37,5 cl of water then 25 cl of milk, 300 g of sugar, 1 pinch of salt and the vanilla or cinnamon
flavour. Stir gently and add 500 g of wheat flour (type T35 or 45)
Equipment needed
We recommend the following accessories for successful ice cream wafer-making:
Stainless steel laddle Krampouz – ref. ALIP60
Stainless steel spatulas
Sunflower oil for the irons
Device for shaping ice cream cones – ref. ACG1
Cooking
Start heating the appliance with the thermostat set to 250°C and irons closed during 12-13
min.
Open the irons.
Using a brush, oil all parts of the plates thoroughly.
Pour half a ladle of batter in the appliance, and close the irons immediately
Leave to cook in this position for 1 min 30.
Lift one side of the iron. Use the spatula to remove gently the wafer. Roll immediately the
wafer into the device for shaping ice cream cones – ref. ACG1.
It is important to shape the wafer really quickly when cooked: when cooling down the wafer
will solidify and would become impossible to shape.
Maintenance and Cleaning
The frame
Before cleaning your appliance, unplug it and let the irons cool down.
Clean the frame and removable trays with a sponge soaked in warm water and liquid detergent.
Stubborn marks can be removed by using a specific commercially available product.
Never use abrasive products or metal brushes.
Never clean the appliance by immersing in water or using a water jet.
The iron covers
The iron covers should be cleaned in the same manner as the frame.
Due to the high temperatures heat this item reaches (over 300 °C), it is normal for the covers to
become brown with time.
The irons
Fats that are used to lubricate the irons or fat already included in the waffle batter will gradually
thicken the waffle irons. Try to avoid the griddle become too thick because:
- It acts as an insulator and interferes with the cooking.
- it can come unstuck or flake off, giving the impression that the metal is disintegrating
