Delta T temperature gradient setting
Foreword: Cooking in the ∆T mode is ideal when medium/large joints of
meat are cooked. This type of cooking process is performed by maintaining
a lower temperature in the oven than the usual one and by lengthening the
cooking time, thereby making the final product more tender and reducing its
weight loss.
How to enable function ∆T
1. Enable parameter dt. = 1, see BASIC OVEN SETTINGS MENU

2. Press key
or
SETTING RANGE 1°C (34°F) - 99°C (210°F).
3. Press the "MEMORY" key and keep it pressed until the indication on the display changes from
flashing to fixed.
4. Connect the core probe to its socket.
5. Enter the final core probe value. Consult the Core probe temperature setting chapter.
NOTE. WHEN THE DELTA-T COOKING PROCESS IS IN PROGRESS, THE ALTERNATING SNAKE
AND d INDICATIONS WILL APPEAR ON THE DISPLAY, AS WELL AS THE PREVIOUSLY ENTERED
GRADIENT VALUE.
YOU CAN DISABLE THE FUNCTION AND TAKE CONTROL OF THE COOKING PROCESS BY
HOLDING THE P/M KEY PRESSED UNTIL THE DISPLAY SHOWS THE COOKING CHAMBER
TEMPERATURE, WHICH CAN BE CHANGED AS REQUIRED.
