H. Cleaning the mixer
While the batter is resting, the kneader has to be carefully cleaned
before doing another test.
Only use microfiber cloth and no metallic tools.
1.
Open kneader by removing the side. Clean it.
2.
Remove the batter left from the kneader.
3.
Remove the mixing arm and clean it.
Be very careful when handling the mixing arm.
4.
Disassemble the F registry and clean it.
5.
Wipe the kneader and remove all the batter that is left.
6.
Wipe a cloth through the nozzle entry hole.
7.
Clean the batter extraction passage.
8.
Clean the kneader level with your finger and a cloth, and then put the
mixing arm back.
9.
Put the F registry back and position it like shown on the picture
below.
10.
Put the side back with its two knob nuts.
I. Inflating dough pieces
The alarm will let you know when resting time is up (28 min after starting kneading).
1.
Unscrew the knurled lock nut (a) and remove the plug (b).
2.
Unscrew the upper plate (e) using the handle (c) and elevate it until it reaches the level of the
three guide bolts (d).
3.
Return the plug and let it rest on the knurled lock nut.
4.
Oil the fixed plate (f) without damaging the bevel and the inner face of the plug.
5.
Slide the dough (g) and center it according to the plate by working on its border.
Be very careful when handling the mixing arm.
6.
Put the plug back and screw the knurled lock nut back to immobilize (h) it.
7.
Flatten dough (k) by screwing the upper plate with the plug (j) blocked by the knurled lock nut
(j) in about 20 seconds (until thrust) and without forcing.
8.
Remove the knurled lock nut and plug and then lower the handle.
9.
Press the key.
10.
The machine will inject air into the dough and measure pressure in the bubble. The line will
appear on the screen. The test is over when the bubble pops.
11.
Press the key
to close air inlet.
12.
Clean the plate of the dough left.
13.
Repeat operation for the next 4 pieces of dough.
Consider lubrificating the plate before loading a patty.
