working properly anymore. Therefore they must be changed
periodically as per the procedure at the point 5.14.
M Burner ventilator malfunction alarm
- The burner ventilator has a retroactive speed control system. If it is
not turning or is turning at maximum speed, which is higher than the
speed foreseen by the parameters, an alarm will be triggered.
Generally speaking, in the event of a malfunction, always check
that all electrical connections are firm and that there is no
damage to any of the cables.
3.7
STOPPING
To stop the appliance, press the STOP button (fig. 31 item 14),
disconnect the power supply by turning the main switch to "0" (fig.
29 item N).
WARNING! When the STOP button is pressed, ventilation and
movement of the belt will continue for approximately 12 minutes,
to allow the temperature to drop gradually.
WARNING! In an emergency, cut the power by turning the main
switch to "0" (fig. 29 item N).
3.8
USE
After setting the desired cooking parameters, prepare the product to
be cooked on a suitable support (pizza mesh, etc.), making sure that
it does not come out through the perforated part of the mesh; use a
baker's shovel to transfer it onto the conveyor belt at the baking
chamber infeed end, and it will come out at the other end cooked.
If you have no experience of the values to be set, start cooking with a
temperature of 330 °C, and a cooking time of 3'40", then adjust the
parameters based on the results of the first cooking operation, until
you find the best ones for your needs.
It takes approximately 25 minutes for the oven to come up to
temperature, only start cooking after the temperature has stabilised.
WARNING! Initial placement and final collection of the product
to be cooked must be carried out using special accident
prevention equipment such as pizza shovels, etc. (fig. 35 item O),
taking great care; when the oven is working you must never, for
any reason, approach any moving parts. All operations must be
carried out only after turning the appliance off.
The cooking phases can be observed through the porthole on the
front door. Should it be necessary to do anything to the product, for
example using an implement to pop the bubbles that may form in the
pizza, the door can be opened with great care using the front handle
(fig. 35 item Q).
WARNING! Always use a tool to carry out operations inside the
chamber, and take care to ensure that the tool does not get
caught up in the belt and that your arms do not get pulled inside.
Never put your arms inside the chamber, as there is a risk of
burning and you might get caught up in the belt with the risk of
being dragged in and crushed by its movement.
WARNING! At the end of the working day, remember to
disconnect the power supply and close the gas tap upstream of
the oven. If the oven is not to be used for a long period of time,
clean it carefully and make sure that the room in which it is
installed is adequately ventilated.
4
ORDINARY MAINTENANCE
4.1
PRELIMINARY SAFETY OPERATIONS
WARNING! Before performing any maintenance operation stop
the appliance and cut the power supply by turning the main
switch (fig. 29 item N) to "0", then disconnect the power supply
by disconnecting the power cable from the power socket.
Turn the gas supply off.
Operations must only be carried out after the appliance has
cooled down.
All maintenance operations must be carried out by qualified
technicians using suitable safety equipment.
All precautions are to keep the appliance in a proper state, and
failure to observe them might result in severe damage that will
not be covered by the guarantee, and in unnecessary risks.
4.2
ROUTINE CLEANING
After carrying out the operations described in point 4.1 above, clean
the appliance as follows:
Every day, at the end of operations and after leaving the appliance to
cool down, carefully remove from all parts of the oven, any residues
that might have collected during cooking, using a damp sponge or
cloth and a little soapy water, if necessary. Rinse and dry the areas,
being sure to wipe parts with satin finish in the direction of the finish.
Carefully clean all accessible parts.
Clean the belt with a stiff nylon brush.
Slide out the flour trays on the left and right (fig.14 item T); clean
and refit them.
WARNING! Every day, carefully clean off any fat or grease that
may have dripped during cooking as this is a potential fire
hazard.
WARNING! Never clean the appliance with direct jets of water
or with pressurised water jets. Do not allow water or any
cleansers used to come into contact with electrical parts.
The use of toxic or harmful detergents is prohibited.
NOTE: Do not clean the tempered glass in doors while it is still
hot.
Do not use solvents, detergents containing aggressive substances
(chlorides, acids, corrosives, abrasives, etc. ...) or equipment that
could damage surfaces. Before starting up the appliance again,
make sure that none of the cleaning equipment has been left
inside.
4.3
CLEANING THE BURNER AIR FILTER
After 900 hours of cooking the following message will appear
CLEAN FILTER
TYPE FILTER INTERNAL CODE:
TYPE OK TO CONTINUE
Which invites you to clean the burner air filter.
The operator will be able to continue working by pressing OK, or
typing in the code written inside the filter holder (fig. 37 item C) and
zeroing the 900 hours.
If the operator presses OK the message CLEAN FILTER will remain
visible, and every time the oven is made to STOP and then START
you will be given the options again. This is to allow the current
cooking cycle to be completed.
WARNING! Failure to clean the filter may compromise the yield
and safety of the appliance
With the appliance turned off, remove the finned cover and the filter
fabric from the base, using a screwdriver in the slot provided on the
edge of the cover (fig. 37)
The filter fabric (fig. 37 item F) can be cleaned by rinsing, treatment
with a water jet or beating, then allowed to dry.
Read and note down the 4 number code written inside the filter
holder (fig. 37 item C)
Insert the filter fabric into the finned cover, with the lower density
side facing towards the air inlet, and hook the cover to the base in
the set position.
Restart the appliance and, when requested to do so, enter the filter
internal code by typing it on the keyboard to complete the operation.
4.4
PERIODS OF INACTIVITY
If the appliance is not to be used for long periods:
- Disconnect it from the power supply.
- Turn the gas supply off.
- Cover it to protect it from dust.
- Ventilate the rooms periodically.
- Clean the appliance before using it again.
