has been carried out, using a special, non-corrosive gas leak indicator
spray.
Never use a naked flame when looking for possible gas leaks.
- Turn the appliance off.
- Replace the seals on the Venturi cone gas regulator and, if it has
been removed, on the gas valve cap, using a drop of heat-
resistant red paint.
- Replace the burner cover (fig.20 item M) carefully, making sure
that there are no cracks through which unfiltered air might pass.
WARNING! Once the operation has been completed, affix the
rating plate with the correct information for the type of gas for
which the appliance has been transformed (see fig.2 in position
G) over the existing rating plate.
3.4.3
CHANGING USE BETWEEN METHANE OF TYPES
G20 G25 G25.1
To change use between methane of types G20, G25, G25.1 proceed
as follows:
- Turn the gas supply tap off.
- Disconnect the power supply by removing the power cable from the
power socket.
- Remove the burner cover (fig. 20 item M).
- Remove the seal from the gas regulator on the Venturi cone (fig.22)
and with the aid of a large screwdriver turn the regulator until you
obtain the value X = see TAB.1 technical data for the type of gas
supplied.
WARNING! Precision-check the value X using a CALIBRE.
- Connect up the power supply.
WARNING! SET UP THE INTERNAL PARAMETERS
ACCORDING
TO
THE
FOLLOWING THE PROCEDURE GIVEN IN POINT 3.4.4
- Turn the gas supply tap on.
- Loosen the retention screw inside the gas valve outlet pressure
takeoff (fig. 27 item T)
- Connect the pressure gauge to the pressure takeoff, after making
sure it has been zeroed.
- Turn the appliance on as indicated in the instructions.
- On start-up the pressure value initially changes. Wait until the
burner is lit, then check the pressure at that point, which must be 0
mbar. If this is not the case, remove the cap (fig. 28 item U) and
adjust the screw beneath it (fig. 28 item Z) until the pressure
indicates 0 mbar.
- Turn the appliance of as described in the instructions.
- Remove the pressure gauge.
- Tighten the retaining screw on the pressure takeoff (fig. 27 item T)
and replace the cap in the gas valve (fig. 28 item U)
- Check the gas infeed pressure as indicated in point 3.2.2.
- After completing connection, with the appliance started up, perform
a gas seal test, paying particular attention to the areas on which work
has been carried out, using a special, non-corrosive gas leak indicator

SETTING SOFTWARE PARAMETERS
WARNING! The software parameters must only be set by
trained, qualified technicians, and must only be changed when
transforming the appliance to use a different type of gas from the
one for which it was originally set up, or for special maintenance
operations.
It is necessary to press the OK and down arrow buttons
simultaneously for 5 seconds (fig. 31 items 13 and 10), at which
point a page similar to the one shown in fig. 34 will be shown.
Select the parameter using the right and left arrow buttons to
move around, and modify it using the up and down arrow
buttons (fig. 31 items 11, 12, 9, 10).
It is only possible to modify the first 6 parameters.

MUST BE SET WITH GREAT CARE, ACCORDING TO THE
SUPPLY GAS TYPE, USING THE VALUES INDICATED IN
TAB.1 (for the country of installation).
To quit the menu and save the new parameters after setting,
press P (fig. 31 item 18), if you press OK (fig. 31 item 13) you will

PRELIMINARY CONTROL OPERATIONS
WARNING! Before commencing start-up and programming of
the oven, always check that all electrical and earthing
connections have been properly made;
all gas and vapour exhaust connections have been properly
made;
all control operations must be carried out by specialised
technicians holding a valid license.
Before using the oven, clean it as described in point 4.2.
WARNING! Before starting up the appliance each time, please
ensure the following:
- Particular attention must be paid to the warning signs on the
oven (fig.4), which must be undamaged and easily legible. If this
is not the case, replace them.
- Any damaged or missing components must be replaced and
properly fitted before the appliance is used.
- No foreign bodies must be present on the belt.
- The working area must be properly illuminated if used during
the night or if visibility is poor.
NOTE! For the first switching-on of the oven position the two
side walls (fig. 16 item I)
At the max. opening, set the temperature at 250° and switch-on
the oven for 2 hours ab.; after that proceed to the use by the
required setting.
With the oven cold, adjust the following as required:
- Height of the stop at the end of the belt (fig.14 item F) using the
knobs (fig.14 item G).
- Height of the two adjustable side walls (fig.16 item I) using the
knobs (fig.16 item L). (Any adjustments made to these settings when
the oven is hot must be made using suitable accident prevention
equipment, such as suitable insulated gloves etc., and only after
turning the oven off).
NOTE! The oven may have difficulty to maintain the set point
temperature in certain conditions as, for example, with a
relatively too low working temperature or when you bake small
quantity of product and the lateral side walls are not enough
high. In that case try to raise the lateral side walls.
Burner efficiency and performance may vary according to work load.
The bulkhead must always be positioned in a suitably raised position,
according to the cooking results obtained.
For more even results, we recommend avoiding the use of
temperatures above those recommended for the type of product being
baked.
3.5.1
REGULATION ADVANCED AND INFERIOR FLOW
T75G To adjust the opening carrying air over the top and bottom
blowers (to dismantle them see point 4.2.1), loosen the screws (fig.
17 item M) and move the position, adjusting as required, then lock
the screws again (the manufacturer's setting is maximum aperture).
T97G possibile regulation of the section for the passing of the air on
the inferior and advanced blowers, to work to the knobs (picture 17
part.A and B) and to rotate the position from 1 to 5, the regulation
of the building firm is in the position 1 that corresponds with the
maximum opening, the positions from 2 to 5 reduce more and more
the air flow.
