WHAT TO DO WHEN...
Steam is coming out from under the edge of the lid:
This could be because the lid is not properly fitted to
the body, or because the knob has not been sufficiently
tightened.
It could also be because the sealing gasket is worn, in
which case you will need to replace it with an original
ALZA sealing gasket.
Steam is coming out of the valve:
This is normal. It occurs because the pressure indicator
needs a slight clearance so that it can move correctly
and so a small amount of steam may come out through
the valve.
If a lot of steam is coming out, this is because the cooker
ring is turned too high. Turn down the power setting im-
mediately.
Dirt inside the valve can also be a cause of steam coming
out. You should clean it periodically.
The rotary valve is not turning:
Check there is enough water in the pressure cooker.
Check whether the steam outlet is dirty. If it is, clean it
with a rod (Fig.1).
Never turn the knob until the pressure cooker has been
removed from the ring and all the pressure has been
released.
The pressure cooker cannot be opened after cooking
and cooling down:
The pressure cooker lid could be stuck to the sealing gas-
ket with cold grease. Put the pressure cooker back on
the ring and heat it up a little. Then let off the steam and
open the pressure cooker according to the instructions.

Soups and Stews:
Soups that produce froth should be firstly boiled with
the pressure cooker open, and then the froth skimmed
off using a slotted spoon. Then close the lid. Chick peas,
lentils, beans etc. should be soaked before cooking.
The amount of liquid left at the end of cooking will be
practically the same as the amount you added when
you closed the pressure cooker.
Vegetables:
Place vegetables in the pressure cooker in hot, but
not boiling, water. For frozen vegetables, increase the
cooking time by a few minutes.
Cereals, Pasta, Legumes:
Pressure-cooked rice will need much less liquid.
You must be very careful with pasta and rice, as the
cooking times are very short.
Place dried vegetables in the pressure cooker in cold
water and add salt before cooking.
Meat:
The cooking times will depend on the type and size of
the meat. If you wish to use pieces of meat weighing
over 1 kg., you should cut them into smaller pieces.
You should brown the meat thoroughly before adding
the liquid and closing the pressure cooker.
Fish:
Frozen fish does not need to be thawed beforehand.
If you wish to cook soft fish, turn down the heat when
the first pressure indicator ring appears, so that it is
cooked at a lower pressure level than usual. If you are
cooking denser fish, turn down the heat when the sec-
ond ring appears
