RECIPE GUIDE
PINEAPPLE SYRUP
•
1 small pineapple
•
2 cups of water
•
4 cups of sugar
Instructions
•
In a clean bowl mix the water and sugar together.
•
Skin the pineapple and cut into cubes (approx. 1 inch).
•
Add to the water and sugar mixture and stir.
•
Cover and let the mixture sit for 24 hours.
•
Using a masher or hand juicer press on the pineapple pieces.
•
Stir the mixture until all the sugar has dissolved.
•
Pour the syrup through a fine strainer or cheesecloth.
•
Bottle and refrigerate, use within 48 hours or add a little spirit as a
preservative (clear spirit such as vodka).
FRESH MINT SYRUP
•
2 cups fresh mint sprigs
•
1 ½ cups water
•
1 ½ cups sugar
Instructions
•
Place all ingredients in a saucepan and bring to the boil.
•
When the sugar has completely dissolved, remove from the heat.
•
Leave to seep for 5 minutes or until the syrup has reached the required
intensity.
•
Strain the liquid using a fine strainer or cheesecloth.
•
Once cool bottle and refrigerate until ready for use.
Note: if kept refrigerated this syrup will last for up to 2 weeks.
Other herbs and spices can be made in to syrup by follow the same instructions.
