HOME MADE STRAWBERRY SYRUP
•
2 ½ cups of sliced strawberries (any berry can be used raspberries,
blackberries etc.)
•
3 cups of sugar
•
2 cups water
Instructions
•
Rinse the berries and remove the stems.
•
Slice the berries and place in a medium saucepan.
•
Add the water (add extra if 2 cups do not cover all the fruit)
•
Bring to the boil.
•
Reduce the heat and let the fruit simmer for 20 minutes, skimming any
foam which may rise to the top.
•
Remove from the heat when you notice that the fruit has lost its colour and
the liquid has turned the colour of the fruit.
•
Remove the fruit from the liquid using a strainer. Do not squeeze the liquid
out of the berries as this will cause the syrup to turn cloudy and loose its
colour.
•
Return the water to the pan and add the sugar.
•
Bring back to the boil and simmer until all the sugar has dissolved.
•
Remove from the heat and leave to cool completely before pouring into a
bottle or dispenser and refrigerate until ready to use.
•
Note: The syrup will last up to 10 days if kept refrigerated.
