RULES FOR THE ROAD
Low & Slow
When in doubt, infuse at lower temperatures.
This will ensure all the wholesome goodness
(flavors, aromas, nutrition) of your ingredients
remain intact.
Coarse Grind
We recommend coarsely ground herbs, as
opposed to finely ground, to prevent unwanted
particles in your infusions and final creations.
Moisture is Not Your Friend
The more moisture in the herb, the shorter the
shelf life of your infusion. Consider using the
DRY cycle before infusing to keep your
infusion fresher, for longer (and always store
finished infusions in a cool, dark place).
Less Refined is Better
When it comes to fats in your oil or butter, the
more refined, the higher the smoke point and
more neutral the taste. The less refined, the
smoke point is lower and the taste is more
flavorful. Plus, there is more added "good stuff"
(like healthy fats, antioxidants, and vitamins).
Refinement is the process of separating different
elements of a substance and distilling or process-
ing it, so it no longer contains all of its original
ingredients. Example: White flour is refined, whole
wheat flour is unrefined.
