Lemon Wafers
Ingredients:

oz) margarine or butter, 100g

oz) sugar, 2 eggs, grated lemon rind, 200

g (7 oz) flour, 1 tsp. baking powder, 125 ml

fl oz) lukewarm water, 1-2 tbsp. lemon

juice, whipped cream for filling
Preparation:
Whisk the fat, sugar and lemon rind and add
the eggs one after another. Then mix in
small portions of the lukewarm water (in
which the remaining sugar has been
dissolved) and the flour sifted with baking
powder, alternately. Finally add the lemon
juice.
Bake the dough immediately.
Roll up the baked discs of dough into or
rolls.
Fill with whipped cream.
