OSITIONING OF THE MACHINE
The plug must be accessible, does not have
to require any kind of movement. The cable
from the machine to the wall plug must not
be pulled tightly, also do not rest the
machine on the cable (Fig 9).
FUNCTIONING
On the front of the machine (Fig.10) you
will find the regulating control 1: green
button to start, red button to stop and a
green light.
To start: press the green button, the light
will illuminate and the motor will switch on
Stop: press the red button, the motor will
cut out and the light will gradually fade.
Start the machine without using It, let it run
for 1 minute and make sure it is functio-
ning perfectly.
USAGE
TO START: Press the green button; the
machine starts the two rollers and it starts
now ready to be used.
Before `you introduce in the opening of the
highest cover (2) the small ball of dough''
made with flour and left to rise (at least
from 4 to 6 hours) squash the sides slightly
so it can easily -go through the highest
rollers (3).
When the dough comes out you will see a
reduction of thickness (S), with an oval
shape, then sliding along the scale it will
make a turn of about 90° (4) ready to go
under the lowest rollers (5) out of which it
will have a disk shape (6). This shape is not
perfect so it needs the finishing touches by
hand.

REGULATIONS
Regulating the machine can only be recom-
mended as there are different characteris-
tics of the dough, the weight, the thick-
ness; the size and the shape of the disk
Therefore the correct regulating of the
machine must be made by experimenting.
The machine is provided with medium size
regulation.

OW TO REGULATE THE THICKNESS
IMPORTANT: All the regulations have to be
done when the machine is off.
With this machine you can have different
thicknesses of dough to suit all require-
ments, just by turning the levers A-B from
position 1 to VI (Fig.10) you can unblock
them pulling the black lever.
The thickness can be modified turning the
levers:
- (-) turning clockwise for minimum thick-
ness
- (+) turning anticlockwise for maximum
thickness.
To obtain the best results we suggest you
vary the different regulations.
Ex.: Lever A in position IV
Lever B in position II
Note: To avoid breaking the dough, let It
pass only once through the rollers.
How to regulate the scale:
Ex:- Maximum sensibility: position the
counterbalance towards the inside of the
pole.
- This is recommended for lower weights.
Minimum sensibility: Position the counter-
balance towards the extreme of the pole.
- This is recommended for higher weights.
MAINTENANCE
IMPORTANT: Before doing any kind of
maintenance or cleaning you must take out
the plug.
In any case of malfunctioning or damages
of the machine you must apply for authori-
zed assistance from the manufacturer.
CLEANING
Cleaning must be done every time the
machine has been used following all the
rules to prevent malfunctioning of the
machine and for hygienic purposes.
Using a proper brush, first clean the resi-
due of flour and dough.
Remove the following (Fig.11): the two
covers, the small scale and the two slides,
release the two springs N, loosen the
dough scrapers P-Q then turn the regula-
ting levers in position VI, maximum ope-
ning of the rollers K.
Accurately clean the machine and all the
dismounted parts using a sponge or a
damp cloth with a little soap, avoid using
metal . wool, abrasive powders or corrosive
substances, which can damage the compo-
nents and be dangerous from a hygienic
point of view. Rinse until completely clean
with a soft cloth. Mount: the doughscra-
pers, the springs, the slides, the small scale
and the covers.
Be sure that all pieces are correctly in place
before using.
