sausage seasonings or your own sausage recipe and marinade for 4 to 8 hours
in the refrigerator before making sausage, brats, or hot dogs. The longer the meat
marinates, the more 昀氀avorful the stuffed product.
Assemble Grinder for Stuf昀椀ng
Following the section Assembling Your Grinder, assemble the grinder with the
cutting blade and with the coarse cutting plate. Using any other size cutting
plate will result in further reducing the size of your ground meat. Prior to screwing
on the locking nut, assemble the small or medium sausage stuffer nozzle and
collar over the top of the coarse cutting plate. Use the medium nozzle for brats
and the small nozzle for breakfast links or other sausages and for hot dogs
(Figure 9).

STUFFING CASING FOR BRATS, SAUSAGE AND HOT DOGS
The Eastman Outdoors Variety Sausage Kit is a perfect choice when
making a variety of sausages as it comes with both the seasonings
as well as the casings. After following the soaking directions on the
casings, lay them out in front of the Grinder Housing and place one end
of the casing over the stuf昀椀ng nozzle. Place the meat that was already
ground and combined with the seasoning mix onto the Hopper Tray.
Plug in the Grinder and then turn it on. Use the Food Pusher to gently
press the ground meat mixture downward into the Grinder Housing. Do
not press so hard as to stall the grinder. Allow the meat to be dispensed
into the casing and as the casing 昀椀lls with meat to your desired sausage,
brat or hot dog length then turn the grinder off. Twist the casing several
times to lock the meat in individual sausages. Turn the grinder back on
to 昀椀ll another length of casing and repeat the twisting procedure until the
full length of casing is 昀椀lled with meat.

Then screw the locking nut
