Tropical Chicken
4 boneless, skinless chicken breasts
8-ounce (225 g) can crushed pineapple,
undrained
cup (60 ml) prepared mustard

Place chicken breasts in shallow casserole dish or 8-inch (20 cm) square baking
pan. Combine remaining ingredients and pour over chicken. Bake at 350°F
(180ºC) for 35 to 45 minutes or until done. Serve over rice. Makes 4 servings.
Mini Meat Loaves
1 pound (450 g) lean ground beef
1 small onion, finely chopped

cup (175 ml) fresh bread crumbs

1 egg, beaten
Combine all ingredients and mix well. Divide the mixture between 6-cup muffin
pan. Bake at 350°F (180ºC) for 30 minutes or until done. Makes 4 to 6 servings.
Quick Pizza
2 cups (500 ml) biscuit mix
1 cup (250 ml) milk
1 teaspoon (5 ml) Italian seasoning
1
teaspoon (2.5 ml) garlic powder

In a large bowl, mix together biscuit mix, milk, Italian seasoning, garlic powder,
and Parmesan cheese. Divide dough into 4 biscuits and drop biscuit dough onto
ungreased baking sheet. Form a well in the center of each biscuit. Add two tea-
spoons of pizza sauce to each well. Top with mozzarella cheese. Bake at 400ºF on
lowest rack position for 20 minutes or until done. Makes four pizzas.
Mexican Pizza
Crust
1 cup water
2 teaspoons yeast
1 teaspoon salt
1 tablespoon vegetable oil
3 cups bread flour
Dissolve yeast in warm water. Mix in oil. Stir in salt and bread flour. Knead dough
for 5 minutes. Allow dough to rise for 15 minutes.
Spread dough on greased baking pan. Top with salsa, cheese, chicken, onion,
and green pepper. Bake at 400ºF on lowest rack position for 20 minutes or until
done. Makes 4 to 6 servings.
