Parsley Potatoes
5 red potatoes, about 1
1 tablespoon (15 ml) vegetable oil
1 tablespoon (15 ml) minced fresh parsley
Scrub potatoes and cut each into 6 wedges. Place in a bowl. Drizzle with oil. Sprinkle
with parsley and seasonings. Stir to mix. Pour into baking pan. Bake at 400ºF (205°C)
for 35 minutes or until fork tender. Makes 4 servings.
Minute Muffins
1 cup (250 ml) self-rising flour

cup (125 ml) milk

Stir together ingredients. Spoon into greased 6-cup muffin pan. Bake at 450°F (230°C)
for 12 minutes or until done. Makes 6 muffins.
Apple Kuchen
8-ounce (225 g) box yellow cake mix
(makes 1 layer)
3 tablespoons (45 ml) butter, melted
1 large Golden Delicious apple

teaspoon (2.5 ml) cinnamon

In a small bowl combine cake mix and melted butter. Mix. Place mixture into
greased 8-inch (20 cm) square baking pan. Press onto bottom and slightly up sides.
Peel, core, and thinly slice the apple. Lay slices on crust. Combine cinnamon and
sugar. Sprinkle half of sugar mixture over apples. Combine sour cream, egg, and
vanilla. Pour over apples. Sprinkle remaining sugar mixture over sour cream.
Bake at 350ºF (180°C) for 40 minutes or until lightly browned and apples are tender.
Makes 6 to 8 servings.
Half-Pound Cake
3-ounce (85 g) package cream cheese
6 tablespoons (90 ml) butter or
margarine, room temperature
1 cup (250 ml) sugar
In a mixing bowl, cream together cream cheese, butter, and sugar. Beat in eggs and
vanilla. Add flour and stir until mixed. Spoon into greased 8x4-inch (20 x 10 cm)
loaf pan. Bake at 350ºF (180°C) for 50 minutes or until tests done. Makes 6 servings.
