Aroma Grill-Express
Put the food to be grilled into a
salt solution
If you put the food to be grilled into a salt
solution for 8-12 hours before grilling, you
can strengthen the taste of the smoke.
Salt solutions are available for sale as
brining solutions but must be strongly di-
luted to prevent oversalting.
However, you can mix a mild salt solution
yourself.
Add roughly 1 teaspoon of salt (ap-
prox. 20 g) to 1 litre of water.
Refine the salt solution – depending
on taste – with herbs and spices (ap-
prox. 1 teaspoon each): dill, parsley,
thyme, basil, herbs of Provence, bay
leaves, junipers, pimento and pep-
percorns.
Put the meat into the salt solution and
make sure that the pieces of meat are
covered by the solution.
Cover the bowl and put it into the re-
frigerator.
Take the meat out of the salt solution
after at least 8 hours, wash it thor-
oughly under running water and allow
it to dry.
Now you start grilling. Season the
meat with freshly grounded pepper
but do not add more salt.
