RECIPE GUIDE
GLUTINOUS RICE SWEET WINE
Ingredients
1.
Glutinous rice: 300g
2.
Boiled water, cold: 200g
3.
Sweet wine koji: 6g
Preparation
1.
Clean and disinfect the machine and all of its parts before use.
2.
Clean the glutinous rice and soak it for 5-24 hours, or until the rice grains
can be crushed with your fingers.
3.
Drain the soaked glutinous rice and steam it until cooked. Then, spread it
out to cool down to about 30 degrees.
4.
Pour the wine koji into the cold boiled water and stir to dissolve. Then, pour
into the rice and stir well.
5.
Put the mixture into the 1L measuring cup and compress it tightly. Then,
poke a small indentation in the middle with your finger.
6.
Cover the cup with plastic wrap, put it into the machine, and then cover
with the transparent cover.
7.
Turn the machine on, set the temperature to 33 degrees and the time to 72
hours. Press Start.
8.
After 72 hours, turn off the power, take out the 1L measuring cup and put it in
the refrigerator for about 3 hours for ripening and solidification. Then, enjoy!
PICKLED CUCUMBER
Ingredients
1.
Cucumber: 300g
2.
Pure water: 300g
3.
White sugar: 100g
4.
Rice vinegar: 300ml
5.
Pickling spices: 10g
6.
Coarse salt
Preparation
1.
Clean and disinfect the machine and all of its parts before use.
2.
Rub the cucumber with coarse salt, and then cut into 5~7mm thick pieces.
3.
Pour the vinegar, pickling spices, water, and white sugar into the 1L
measuring cup, stir well, and then add the cut cucumber.
4.
Put the cup into the machine, and then cover with the transparent cover.
5.
Turn the machine on, set the temperature to 36 degrees and the time to 72
hours. Press Start.
6.
After 72 hours, remove from the machine and enjoy!
Note
The cucumber can be replaced with another fruit or vegetable, including papaya,
ginger, and white radish.
