Maintenance
The inspection and maintenance intervals depend on the
actual machine operating conditions (total hours of use)
and ambient conditions (presence of dust, damp, etc.),
therefore precise time intervals cannot be given. In any
case, careful and periodical machine maintenance
is advisable in order to minimise interruptions of the
service.
It is advisable to stipulate a scheduled preventive
maintenance contract with the After-Sales Service.
I6.1
Preventive maintenance
The preventive maintenance call can be activated (call
the After-Sales Service).
If required, the After-Sales Service can be contacted to
arrange an equipment technical maintenance schedule.
I6.2
Regeneration of silica gel filters
ATTENTION!
Direct contact with this substance can
be harmful to health.
Wear protection gloves, a dust mask and
safety glasses and do not smoke, eat
or drink during silica gel regeneration
or replacement operations. To reach
the filters use suitable equipment, such
as scaffolding and platforms (fig. 2/B
page 3); do not use rung ladders or
chairs and tables that are not suitable
(see Table 6 Silica gel Safety sheet).
BROWN SILICA GEL is a dehydrating silica gel with
saturation colour indicator.
During the absorption of steam, the gel changes from
yellow when it is active to blue when it is saturated.
The following operations are necessary for regeneration
of the silica gel filters placed in Zone C:
Remove the power plug from the main panel
the appliance is connected to.
• Loosen the screws "C"
supports;
• Remove the filters from their seats;
• Place the silica gel filters in the oven at 110 °C / 230 °F
for the time needed to obtain the yellow colour;
• Remove the filters from oven and allow them to cool;
• Fit the filters in their seats;
• Block the filters by repositioning the supports;
• Tighten the screws "C" (fig. 4);
• Clean the oven thoroughly before doing a new
cooking cycle.

I6.3
Labyrinth filter maintenance:
The labyrinth filters are coupled with a layer of wire
mesh. They can therefore be cleaned directly in a
dishwasher or with a jet of water.
For their replacement and
follows:
Remove the power plug from the main panel
to which the equipment is connected;
• Remove the labyrinth filters from their
• Wash the filter in plenty of hot water and washing-up
liquid for better degreasing;
• Fit the filter in its special place;

Condenser discharge descaling
Periodically (about every 6 months) remove the scale
from inside the condenser discharge pipe, proceeding
as follows:
• Turn the oven off so as to operate with the machine off;
Remove the power plug from the main panel
to which the equipment is connected;
• Remove the rear cover ("A" fig. 4), undoing the two
fixing screws;
• Undo the nut of discharge "D" (fig. 4)
below the condensate outlet, paying attention to any
spilling of liquid;
• Scrape off the scale inside the pipe using a tool with
curved head;
• Refit everything;

Oven boiler descaling
To descale the oven boiler, proceed as follows:
• Turn the oven off in order to work with the machine off;
Remove the power plug from the main panel
to which the equipment is connected;
• Remove the left labyrinth filter (Zone A);
• Remove the oven boiler pipe closing cap (located near
the left grease tray);
• Add the scale remover according to the oven
manufacturer's instructions;
• Refit the boiler cap;
• Refit the filter;
