76 mm (3") Locking Casters
76 mm (3") locking casters are available for the one, two, and
three-drawer freestanding units in place of the legs. 76 mm (3")
locking casters add 108 mm (4-1/4") to the height of the unit.
use the following procedure to install casters onto the bottom
of the unit.
NOTICE
Do not lay unit on the front or back side or damage to the
unit could occur.
1. Remove any pans from the drawers of the unit.
2. Carefully lay the unit on its left or right side (requires two
people).
3. Remove the legs, if installed.
4. Install the caster into a hole where a leg was removed.
Tighten securely.
Installing 76 mm (3") Casters
5. Repeat steps 3 and 4 for the remaining three casters.
6. Return the unit to the upright position (requires two
people).
51 mm (2") Swivel Casters
51 mm (2") swivel casters are available for one, two, and three
drawer freestanding units. 51 mm (2") swivel casters add 64 mm
(2-1/2") to the height of the unit.
102 mm (4") Locking Casters
102 mm (4") locking casters are available for one, two, three,
and four drawer freestanding units. 102 mm (4") locking casters
add 133 mm (5-1/4") to the height of the unit.
127 mm (5") Locking Casters
127 mm (5") locking casters are available for one, two, three,
and four drawer freestanding units. 127 mm (5") locking casters
add 159 mm (6-1/4") to the height of the unit.
152 mm (6") Adjustable Legs
152 mm (6") stainless steel adjustable legs are available for
one, two, three, and four drawer freestanding units. 152 mm
(6") adjustable legs add 152 mm (6") to the height of the unit.
Oversized Drawer
an oversized drawer and pan is available as a factory installed
option for HDW-X and HDW-XB models. The pan measures
508 W x 381 D x 127 H mm (20" x 15" x 5").
Biscuit Drawer
a biscuit drawer is available as a factory installed option for
HDW-X and HDW-XB models. Biscuit drawers accommodate
two 457 W x 330 D mm (18" x 13") half-size sheet pans (pans
not included).

Stainless Steel Food Pans
Water/Spillage Pan
The water/spillage pan fits in the drawer underneath the food
pan and can be used to humidify the heating area or keep
spillage from the cabinet interior. a Splash baffle is
recommended for use with a water/spillage pan.
Splash Baffle
The splash baffle is used with the optional water/spillage pan.
Fabricated of stainless steel, the baffle fits into the bottom of
the water/spillage pan, over the water bath. The splash baffle
prevents water from splashing into the cabinet interior when
opening and closing a drawer, while allowing humidity to
escape.
Chip Guard
The chip guard completely shields the heating element,
preventing any food product, such as tortilla chips, from coming
in contact with the heating element.
Trivet
a trivet raises food product 13 mm (1/2") off the bottom of a full-
size food pan.
